Meatless Thursday

I was planning on cooking a Mexican supper but saw THE MAN at 4pm and asked what he'd eaten for lunch. Yep. Mexican. I almost always have the fix'ns for cornbread and what better to go with that than veggies? Hence we had corn muffins. baked sweet potatoes, steamed cabbage, cukes, finger peppers and fresh fruit salad. Tomorrow I'm planning on eating out. I must say that if I ever am unfortunate enough to live as a widow I will be eating like many of them do...cereal or frozen dinners.
